A Final Note on Citrus Zests, Twists, and Garnishes

Many of the drink recipes that follow instruct you to “garnish with a twist.” Unless otherwise noted, a simple, thin strip of zest cut from the fruit with a vegetable peeler or knife will do. Some drinks like the old-fashioned warrant a “thick zest,” which, as described, is simply a larger swatch of zest peeled from the fruit—a Y-peeler comes in handy for this. Feel free to improvise with your citrus zests, but I encourage you take cues from your serving glass. A thinner strip of curled zest seems at home peeking over a tall Champagne flute, while a thick orange zest is more appropriate for a hefty double old-fashioned glass.

Keep in mind that twists are there for more than decoration. Before serving, twist your garnish over the drink to release essential oils from the citrus peel, then rub it around the rim of the glass before placing it in, or on, the glass.
